Ingredients

  • 25 lbs ground beef may substitue 5 lbs pork for 5 lbs ground beef if it is lean to add fat
  • 2 cups dry milk
  • 1 cup tender quick salt
  • 1/2 cup sugar
  • 5 tbsp black pepper
  • 3 tbsp coriander (whole)
  • 3 tsp garlic powder
  • 4 tsp onion powder

Instructions

  • mix well over three days mixing well each day
  • form into rolls and place on roasting pans
  • make basting mixture with 1 part liquid smoke and 5 parts water
  • bake at 200 for 4 – 6 hours
  • basting periodically
  • if they are done they will bounce when cool
