preheat oven to 450
clean the insides (giblets and neck ect)
tie legs together
put in pan breast side up securing the wings
place sweet potato and onion around the chicken
rub chicken with 1/2 tsp salt and 1/2 tsp pepper
sprinkle 1/2 tsp salt on vegetables
roast the chicken for 40 min.
remove from pan and tilt chicken to drain liquid into the vegetables
return to pan
add apple wedges
roasrt for 15 min more
brush with jam all over the chicken
roast for 5 more min. or until apples are tender and juices run clear
temperature should be in the thickest part of the thigh at 175 to 180
