Roasted Chicken With Vegetables

Ingredients

  • 1 whole chicken (about 3 1/2 lbs)
  • 2 med sweet potatoes cut into 6 wedges each
  • 1 jumbo onion cut into 6 wedges
  • 1 golden delicious apple cored and peeled For last 5 min of roasting
  • 2 tbsp jam tried various flavors including honey all taste good original called for orange marmalade

Instructions

  • preheat oven to 450
  • clean the insides (giblets and neck ect)
  • tie legs together
  • put in pan breast side up securing the wings
  • place sweet potato and onion around the chicken
  • rub chicken with 1/2 tsp salt and 1/2 tsp pepper
  • sprinkle 1/2 tsp salt on vegetables
  • roast the chicken for 40 min.
  • remove from pan and tilt chicken to drain liquid into the vegetables
  • return to pan
  • add apple wedges
  • roasrt for 15 min more
  • brush with jam all over the chicken
  • roast for 5 more min. or until apples are tender and juices run clear
  • temperature should be in the thickest part of the thigh at 175 to 180
