Salami
Ingredients
- 25 lbs ground beef
- 2 1/3 cup dry milk
- 5 tbsp pepper corns
- 3 tbsp garlic powder
- 3 tbsp coriander
- 4 tsp mace
- 4 tsp cardamon
- 1 cup tender quick salt
Instructions
- mix for 3 days for 6 min each day
- on third day shape into rolls
- place on broiler pan
- mix 1 part liquid smoke and 5 parts water
- cook at 200 for 4 to 6 hours basting with water and liquid smoke while cooking
