Ingredients

  • 25 lbs ground beef
  • 2 1/3 cup dry milk
  • 5 tbsp pepper corns
  • 3 tbsp garlic powder
  • 3 tbsp coriander
  • 4 tsp mace
  • 4 tsp cardamon
  • 1 cup tender quick salt

Instructions

  • mix for 3 days for 6 min each day
  • on third day shape into rolls
  • place on broiler pan
  • mix 1 part liquid smoke and 5 parts water
  • cook at 200 for 4 to 6 hours basting with water and liquid smoke while cooking
