Chicken rice roger
Ingredients
- 2 lbs chicken breasts or thighs
- 1 cup rice
- 1/4 cup wild rice Optional
- 1 chopped onion
- 1 tsp salt
- 1 can small mushrooms (with juice)
- 1 3/4 cup water
- 2 cubes Chicken Boullion
- 2 tbsp butter
Instructions
- cover the chicken with a seasoned flourbrown in oil
- mix the water mushroom juice and bullion cubes
- place rice in bottom of 9" x 13" pan
- Sprinkle wth salt and pepper
- sprinkle the onions on top
- Sprinkle mushrooms next
- dot top with the butter
- Place the chicken on top
- gently add all the water bulion mix
- cover with foil
- bake at 225 for 2 hrs then 250 for 1 hour
- Remove foil the last 15 min. for drier rice.
