Chicken rice roger

Ingredients

  • 2 lbs chicken breasts or thighs
  • 1 cup rice
  • 1/4 cup wild rice Optional
  • 1 chopped onion
  • 1 tsp salt
  • 1 can small mushrooms (with juice)
  • 1 3/4 cup water
  • 2 cubes Chicken Boullion
  • 2 tbsp butter

Instructions

  • cover the chicken with a seasoned flour
    brown in oil
  • mix the water mushroom juice and bullion cubes
  • place rice in bottom of 9" x 13" pan
  • Sprinkle wth salt and pepper
  • sprinkle the onions on top
  • Sprinkle mushrooms next
  • dot top with the butter
  • Place the chicken on top
  • gently add all the water bulion mix
  • cover with foil
  • bake at 225 for 2 hrs then 250 for 1 hour
  • Remove foil the last 15 min. for drier rice.
