Ingredients

  • 2 lbs Chicken Beast (skinless and deboned)
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1/8 tsp pepper
  • 2 beaten eggs
  • 1/2 cup parmesan cheese Grated
  • 1/2 tsp oregano
  • 1 cup pineapple juice
  • 3/4 cup salad oil

Instructions

  • pound chicken till thin, pat dry cut into pieces
  • in a shallow dish combine bread crumbs parmesan cheese spices and salt.
  • Beat eggs in a shallow dish
  • dip chicken into eggs then into the crumb mixture coating both sides.
  • heat oil in skillet
    saute chicken until brown (about 3 min each side)
  • remove to a warm platter.
  • drain fat and add juice scarping up the brown residue until boil.
  • pour over chicken
