Chicken Parmesan
Ingredients
- 2 lbs Chicken Beast (skinless and deboned)
- 1/2 cup bread crumbs
- 1 tsp salt
- 1/8 tsp pepper
- 2 beaten eggs
- 1/2 cup parmesan cheese Grated
- 1/2 tsp oregano
- 1 cup pineapple juice
- 3/4 cup salad oil
Instructions
- pound chicken till thin, pat dry cut into pieces
- in a shallow dish combine bread crumbs parmesan cheese spices and salt.
- Beat eggs in a shallow dish
- dip chicken into eggs then into the crumb mixture coating both sides.
- heat oil in skillet saute chicken until brown (about 3 min each side)
- remove to a warm platter.
- drain fat and add juice scarping up the brown residue until boil.
- pour over chicken
