Gluten Free Chocolate Cake
Ingredients
- 1 1/2 cup sugar
- 1 1/2 cup all purpose gluten free flour
- 1 cup cocoa (dutch processed)
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp xantham gum
- 2/3 cup vegetable oil
- 4 large eggs
- 1 1/3 cup water
- 2 tsp vanilla
Instructions
- Preheat oven to 350 degrees
- lightly grease 2 8-9 inch round pans
- Whisk dry ingredients (not in mixer bowl
- In mixer bowl beat well oil eggs water and vanilla
- Blend in Dry ingredients one cup at a time, scraping the sides and the bottom
- Once all dry ingredients are added beat at medium high speed for two minutes to make the smooth batter
- Pour into pans and bake 30 to 33 minutes (3 to 4 minutes pass the point where the Tooth Pics comes out clean (internal temp 170)
- Remove cake from oven and let stand to cool is the past for 10 minutes
