Gluten Free Chocolate Cake

Ingredients

  • 1 1/2 cup sugar
  • 1 1/2 cup all purpose gluten free flour
  • 1 cup cocoa (dutch processed)
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp xantham gum
  • 2/3 cup vegetable oil
  • 4 large eggs
  • 1 1/3 cup water
  • 2 tsp vanilla

Instructions

  • Preheat oven to 350 degrees
  • lightly grease 2 8-9 inch round pans
  • Whisk dry ingredients (not in mixer bowl
  • In mixer bowl beat well oil eggs water and vanilla
  • Blend in Dry ingredients one cup at a time, scraping the sides and the bottom
  • Once all dry ingredients are added beat at medium high speed for two minutes to make the smooth batter
  • Pour into pans and bake 30 to 33 minutes (3 to 4 minutes pass the point where the Tooth Pics comes out clean (internal temp 170)
  • Remove cake from oven and let stand to cool is the past for 10 minutes
