Low Carb Clam Chowder

Ingredients

  • 1/4 cup chicken stock
  • 1 shallot sliced thin
  • 1 small Leek cleaned , trimmed and sliced
  • 2 ribs celery diced
  • 1 med onion chopped
  • 2 tbsp butter
  • 2 tsp sea salt 1
  • 1 tsp black pepper
  • 3 10 oz cans clam
  • 2 cup clam juice
  • 1 lbs thick cut bacon
  • 8 oz cream ceese
  • 1 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  • heat slow cooker on low
  • add chicken stock, garlic, shallot, leek celery, onions, butter, and salt and pepper
  • Cover and cook for 1 hr.
  • to slow cooker add clams, clam juice and bacon
  • Add cream, cream cheese, garlic powder and thyme
  • continue to mix untill there are no visible clumps of chream cheese and ingredients are well incorporated.
  • Cover and cook for 6-8 hrs.
