Low Carb Clam Chowder
Ingredients
- 1/4 cup chicken stock
 - 1 shallot sliced thin
 - 1 small Leek cleaned , trimmed and sliced
 - 2 ribs celery diced
 - 1 med onion chopped
 - 2 tbsp butter
 - 2 tsp sea salt 1
 - 1 tsp black pepper
 - 3 10 oz cans clam
 - 2 cup clam juice
 - 1 lbs thick cut bacon
 - 8 oz cream ceese
 - 1 1/2 cup heavy cream
 - 1 tsp garlic powder
 - 1 tsp dried thyme
 
Instructions
- heat slow cooker on low
 - add chicken stock, garlic, shallot, leek celery, onions, butter, and salt and pepper
 - Cover and cook for 1 hr.
 - to slow cooker add clams, clam juice and bacon
 - Add cream, cream cheese, garlic powder and thyme
 - continue to mix untill there are no visible clumps of chream cheese and ingredients are well incorporated.
 - Cover and cook for 6-8 hrs.
