Tex-Mex Meatballs
Ingredients
Meatballs
- 1 lg egg
- 1 tsp ground cumin, kosher salt and pepper
- 1/2 cup panko
- 1 1/2 lbs ground beef
- 2 cloves garlic pressed
- 1 jalapeno finely chopped
- 1 cup mexican cheese blend
- 1/8 cup flat-leaf parsley
- 1 tbsp olive oil
Sauce
- 1/2 large white onion finely chopped
- 15 oz crushed tomatoes
- 1 tbsp chopped chipotle chilis in adobo sauce
Instructions
- in large bowl mix meatballs and shape into 2 inch meatballs
- With the oil heat in large skillet on med high arranging meatballs in one layer
- Cook meatballs till brown
- when cooked remove meat balls and set aside
- saute the onion and saute till tender
- stir in tomatoes and chilis
- bring to boil return the meatballs and cook through (8-10) min
- top with1 cup cheese and cook until melted. (2 min)
- top with 1/8 cup parsley
