Tex-Mex Meatballs

Ingredients

Meatballs

  • 1 lg egg
  • 1 tsp ground cumin, kosher salt and pepper
  • 1/2 cup panko
  • 1 1/2 lbs ground beef
  • 2 cloves garlic pressed
  • 1 jalapeno finely chopped
  • 1 cup mexican cheese blend
  • 1/8 cup flat-leaf parsley
  • 1 tbsp olive oil

Sauce

  • 1/2 large white onion finely chopped
  • 15 oz crushed tomatoes
  • 1 tbsp chopped chipotle chilis in adobo sauce

Instructions

  • in large bowl mix meatballs and shape into 2 inch meatballs
  • With the oil heat in large skillet on med high arranging meatballs in one layer
  • Cook meatballs till brown
  • when cooked remove meat balls and set aside
  • saute the onion and saute till tender
  • stir in tomatoes and chilis
  • bring to boil return the meatballs and cook through (8-10) min
  • top with1 cup cheese and cook until melted. (2 min)
  • top with 1/8 cup parsley
