Crab Cakes

Ingredients

  • 6 ounces flaked crab meat
  • 2 lightly beaten eggs
  • 1 1/2 ounces quick oats
  • 1/2 cup scallions
  • 1 tbsp chopped fresh coriander
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/4 tsp hot pepper sauce
  • 2 tbsp flour

Instructions

  • mix all but flour and oil
  • let stand 30 min shape into patties
  • lightly coat each patty with the flour
  • heat oil over med-high heat
  • cook crab cakes 5 min on each side until browned
