Pavlova

Ingredients
- 4 egg whites
- pinch salt
- 1 cup castor sugar
- 1 tsp corn starch
- 1 tsp vinegar
Instructions
- cover a tray with foil mark a 7 in circle and grease lightly
- beat egg whites and salt until stiff peaks form
- gradually add sugar (one third at a time)beating well after each addition
- fold in corn flour and vinegar
- pile on foil to 1/2 " of circle
- and about 2 1/2 inch high
- bake at 250 on bottom shelf 1/2 hour
- lower temp to 200 and bake for 3/4 hour until outside is crisp
- when cool top with whip cream and fruit
Notes
for mint pavlova add 1 tsp mint essence
