Chocolate Zucchini Cake

Servings 8 Small Loaves

Ingredients

  • 2 1/2 cup flour
  • 4 Tbsp coco powder
  • 1/2 tsp salt
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup butter (room temp)
  • 2 cup grated Zucchini
  • 1/2 cup milk
  • 1 1/2 tsp lemon juice
  • 1 tsp Baking soda
  • 1 3/4 cup sugar
  • 3/4 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  • in a cup mix milk lemon juice and soda then set aside
  • in a bowl peal and grate 2 cups zucchini
  • in a bowl combine flour, salt, and coco powder and stir with wisk
  • in a cup combine eggs
  • in a mixing bowl beat oil and butter
  • add eggs and beat well
  • Add eggs and beat well
  • beat in sugar till light and fluffy
  • add some flour and alternate with milk mixture
  • combine well the fold in zucchini
  • pour into greased and floured 9 x 13 pan sprinkle with choco chips and nuts (optional)
  • bake at 340 (yes) for 30 min
  • cool on wire racks
  • (30 min for 3×5 loaf pans)

1 9 x 13 pan or 8 3 x 5 loaves pans
