Chocolate Zucchini Cake
Servings 8 Small Loaves
Ingredients
- 2 1/2 cup flour
- 4 Tbsp coco powder
- 1/2 tsp salt
- 3 eggs
- 1/2 cup oil
- 1/2 cup butter (room temp)
- 2 cup grated Zucchini
- 1/2 cup milk
- 1 1/2 tsp lemon juice
- 1 tsp Baking soda
- 1 3/4 cup sugar
- 3/4 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- in a cup mix milk lemon juice and soda then set aside
- in a bowl peal and grate 2 cups zucchini
- in a bowl combine flour, salt, and coco powder and stir with wisk
- in a cup combine eggs
- in a mixing bowl beat oil and butter
- add eggs and beat well
- Add eggs and beat well
- beat in sugar till light and fluffy
- add some flour and alternate with milk mixture
- combine well the fold in zucchini
- pour into greased and floured 9 x 13 pan sprinkle with choco chips and nuts (optional)
- bake at 340 (yes) for 30 min
- cool on wire racks
- (30 min for 3×5 loaf pans)
