egg whites

salt

castor sugar

corn starch

vinegar
Instructions
cover a tray with foil mark a 7 in circle and grease lightly
beat egg whites and salt until stiff peaks form
gradually add sugar (one third at a time)beating well after each addition
fold in corn flour and vinegar
pile on foil to 1/2 " of circle
and about 2 1/2 inch high
bake at 250 on bottom shelf 1/2 hour
lower temp to 200 and bake for 3/4 hour until outside is crisp
when cool top with whip cream and fruit
Notes
for mint pavlova add 1 tsp mint essence
