English Muffin Loaf

Ingredients

  • 5 1/2 – 6 cup flour
  • 2 tbsp yeast (dry active)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 2 cup milk
  • 1/2 cup water
  • some cornmeal

Instructions

  • combine 3 cups flour, yeast, sugar, salt, and soda
  • warm water and milk to between 120 -130 degrees
  • add to dry ingredients
  • stir in enough remaining flour to make a stiff batter
  • put into greased and corn floured 8 1/2 x 4 1/2 loaf pans
  • sprinkle cornmeal on tops of loaf
  • cover and let rise 45 min.
  • bake at 400 for 25 min.
  • remove from pan imediateley and cool on racks

Notes

Can microwave by reducing the flour by 1 cup
Mix as above
Cook each loaf on high 6 1/2 min (no longer)
Allow to rest 5 min before removing from the pan
Sliced bread will need to be toasted for best flavor (our opinion)
