Dipping Sauce

Ingredients

  • 8 tbsp butter
  • 2 cup minced onions
  • 1 minced garlic
  • 1 1/2 tsp chili powder
  • 2 cup tomato juice
  • 3/4 cup white vinegar
  • 2 tbsp worcestershire sauce
  • 1/2 tsp mustard powder mix with 1 tbsp water
  • 1 tsp minced chipotle chili in adobe
  • 2 tbsp mild molasses (or dark)(not blackstrap)
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  • heat butter in med sauce pan until foamy
  • add onion and cook till softened (2 – 3 min)
  • add garlic and chili powder
  • cook stirring constantly until fragrant (about 20 sec.)
  • add tomato juice, 1/2 cup vinegar,worcestershire sauce, mustard, chipotle, molasses, and salt
  • bring heat to high and bring to simmer
  • lower temp to medium and continue to simmer stirring occationaly
  • when sauce is slighly thickened and reduced to 1 1/2 cup (30 – 40 min)turn off heat and stir in pepper and remaining vinegar (1/4 cup)
  • cool to room temperature

Notes

may be kept in refrigerator for up to 4 days
bring to room temperature before serving
