Dipping Sauce
Ingredients
- 8 tbsp butter
- 2 cup minced onions
- 1 minced garlic
- 1 1/2 tsp chili powder
- 2 cup tomato juice
- 3/4 cup white vinegar
- 2 tbsp worcestershire sauce
- 1/2 tsp mustard powder mix with 1 tbsp water
- 1 tsp minced chipotle chili in adobe
- 2 tbsp mild molasses (or dark)(not blackstrap)
- 1 1/2 tsp salt
- 1/4 tsp ground black pepper
Instructions
- heat butter in med sauce pan until foamy
- add onion and cook till softened (2 – 3 min)
- add garlic and chili powder
- cook stirring constantly until fragrant (about 20 sec.)
- add tomato juice, 1/2 cup vinegar,worcestershire sauce, mustard, chipotle, molasses, and salt
- bring heat to high and bring to simmer
- lower temp to medium and continue to simmer stirring occationaly
- when sauce is slighly thickened and reduced to 1 1/2 cup (30 – 40 min)turn off heat and stir in pepper and remaining vinegar (1/4 cup)
- cool to room temperature
Notes
may be kept in refrigerator for up to 4 days
bring to room temperature before serving
