Waikiki Chicken

Ingredients

Coating

  • 6 bone in chicken breasts may use more
  • 1/2 cup flour
  • 1/3 cup shortening
  • 1 tsp salt
  • 1/2 tsp pepper

Sauce

  • 1 can pineapple rings
  • 1 1/4 cup pineapple juice
  • 1 cup sugar
  • 2 tbsp corn starch
  • 3/4 cup cider vinegar
  • 1 tbsp soy
  • 1/4 tsp ginger
  • 1 chicken boullion cube
  • 1 large green pepper sliced in rings

Instructions

  • combine pineapple juice, sugar, corn starch, vinegar, soy sauce, ginger, and bouillion cube
  • Brown the chicken with the flour, salt, and pepper in the shortening
  • place chicken in 9 x 13 inch pan
  • preheat oven to 350
  • boil the sauce 2 min
  • pour over chicken
  • bake uncovered for 30 min
  • add
  • pineapple and green peppers
  • bake anouther 30 min or until chicken is done

Notes

we use bone in chicken breasts
also you need to at least cook with the green pepper.
The flavor is enhanced with the bone in and green pepper
