Jonathan’s Potato Salad

Jonathans Potato Salad

Ingredients

  • 1/2 lbs bacon (chopped into pieces)
  • 1 chopped onion
  • 1 shredded carrot
  • 1 cup sugar
  • 2 tbsp flour
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tsp salt
  • 2 tsp prepared mustard
  • 10 peeled boiled and cubed potatos

Instructions

  • combined sugar, vinegar, water and salt
  • stir occationaly until sugar is disolved
  • in a skillet brown bacon pieces then remove
  • in the bacon grease cook onions until opaque and soft
  • sprinkle in flour and stir well
  • slowly add vinegar mix
  • cook untill bubbly and thick
  • stir in carrots and cook to desired doneness
  • add 1/2 the bacon bits
  • pour on drained potatos
  • toss just before serving
  • top with remaining bacon pieces
