Keto Chicken Enchilada Soup
Ingredients
- 1 lbs chicken breast cooked and shredded
- 1 tbs olive oil
- 1 lrg bell pepper chopped
- 1 cup chopped onion
- 2 tsp chili powder
- 2 tsp garlic powder
- 2 tsp cumin
- 1 tsp paprika
- 2 cup chicken broth
- 1 cup low carb salsa
- 10 oz rotel tomatoes
- 2 cup cheddar cheese sherdded
- salt and pepper to taste
Instructions
- heat olive oil in a large pot over med heat, add onions and bell pepper and saute fo 2-3 min
- addgarlic powder cumil chili and paprika stir 30 sec
- whisk in chicken broth and stir until wll combined reduce heat to med
- add salsa and rotel
- Stir in shedded cheese until melted and simmer about 10 min
- stir in whipping cream and cook 1-2 min
- serve with fresh herbs as garnish
