Keto Chicken Enchilada Soup

Ingredients

  • 1 lbs chicken breast cooked and shredded
  • 1 tbs olive oil
  • 1 lrg bell pepper chopped
  • 1 cup chopped onion
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 2 cup chicken broth
  • 1 cup low carb salsa
  • 10 oz rotel tomatoes
  • 2 cup cheddar cheese sherdded
  • salt and pepper to taste

Instructions

  • heat olive oil in a large pot over med heat, add onions and bell pepper and saute fo 2-3 min
  • addgarlic powder cumil chili and paprika stir 30 sec
  • whisk in chicken broth and stir until wll combined reduce heat to med
  • add salsa and rotel
  • Stir in shedded cheese until melted and simmer about 10 min
  • stir in whipping cream and cook 1-2 min
  • serve with fresh herbs as garnish
