Strawberry Rhubarb Crisp

Ingredients

Filling

  • 6 cup rhubarb cut into 1/2 inch section
  • 4 cups halved strawberries
  • 3/4 cup sugar
  • 2 tbsp flour

Crisp Topping

  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 2 tbsp sugar
  • 1 1/2 cup flour
  • 1/4 tsp cinnamon
  • 1/2 cup chopped walnuts

Instructions

Filling

  • combine rhubarb strawberries, sugar, and flour in a large bowl.
  • toss to coat the fruit
  • place in a 10 inch baking dish

Topping

  • combine butter and sugar beat until creamy
  • stir in flour, cinnamon, and walnuts
  • combine over the fruit mixture
  • place dish on a cookie sheet and bake for 35 -40 min at 400
  • until fruit is bubbling and top is brown
  • serve with ice cream or whipped topping
