Pitas

Ingredients

  • 1 tbsp yeast
  • 1 cup wheat flour
  • 3 cup white flour up to the amount
  • 1 1/2 tsp salt
  • 1 3/4 cup water
  • 2 tbsp oil

Instructions

  • combine 2 cup flour (wheat and white) yeast sugar and salt mix well
  • heat water and oil until warm
  • add to flour mix and blend on low speed until moistened
  • beat 3 min at med speed
  • add remaining flour and knead about 10 min
  • rest for 20 min
  • punch dow dough and divid into 12 shaped balls
  • place on board with space between
  • cover and let rise for 30 min
  • preheat oven to 500
  • roll each ball into 6 " circle
  • place 3 at a time in oven right on the rack
  • bake until puffed and brown about 3 min
  • cool on racks cut in 1/2 and stuff insides for sandwhiches
