Pretzel Buns

Ingredients

Dough

  • 1 3/4 cup warm water
  • 2 tbsp unsalted butter
  • 3/4 tsp salt
  • 4 1/2 cup flour
  • 1/4 cup powdered milk
  • 2 tsp instant yeast

Water Bath

  • 2 quarts water
  • 1 tbsp salt
  • 1/4 cup baking soda

Instructions

  • mix dough to smooth and slightly sticky (5 Min)
  • Raise in oil bowl 1 hr and covered
  • gently deflate and put on greased board
  • divide into 10 pieces
  • shape into balls
  • place on greased baking sheet cover and rest 1 min
  • preheat over to 400
  • prepare water bath (add salt and soda slowly ) or it will boil over
  • gently drop balls into water bath
  • cook for 30 seconds turn over and cook another 30 seconds
  • use a slotted spoon and transfer onto well greased baking sheet
  • cut 1/2 inch deep X in the center of each roll (may do other designs)
  • sprinkle with course salt
  • bake 20 to 24 min or until dark brown
  • remove and cool on wire racks
