Pecan ice Box Cookies
Ingredients
- 1 3/4 cup sifted flour
- 1/4 tsp salt
- 3/4 cup butter
- 2/3 cup sugar
- 1 egg
- 1 tsp vanilla
- 3/4 cup pecan finely chopped
Instructions
- Sift together flour and salt then set aside
- combine butter and sugar into bowl until fluffy
- add egg and vanilla and stir together
- combine dry ingredients into the butter mix until well blended
- stir in 1/4 cup pecan
- devide into half and roll into 6 inch roll
- roll in remaining pecans
- wrap each roll into plastice wrap
- chill overnight
- cut each roll into 18 slices
- place on greased cookie sheet about 2 in apart bake at 350 for 12 min.
- remove and place on wire rack store when cooled
