Lemon Meringue Pie
Ingredients
- 3 tbsp cornstarch
- 2 tsp lemon rind
- 1 cup warm water
- 1 1/4 cup Lemon Juice
- 3 eggs
- 1 tsp vanilla
Instructions
- separate Eggs
- cook cornstarch, lemon rinds, sugar, water, egg yolks, and lemon juice
- cook until thickens stirring occasionally
- cool before putting into cooked 9 inch pie shell
- beat the egg whites and powders sugar till fluffy
- spread liberally over the pie
- put in 350 for 8 min to brown the meringue
- Let cool and server
