Ingredients

  • 3 tbsp cornstarch
  • 2 tsp lemon rind
  • 1 cup warm water
  • 1 1/4 cup Lemon Juice
  • 3 eggs
  • 1 tsp vanilla

Instructions

  • separate Eggs
  • cook cornstarch, lemon rinds, sugar, water, egg yolks, and lemon juice
  • cook until thickens stirring occasionally
  • cool before putting into cooked 9 inch pie shell
  • beat the egg whites and powders sugar till fluffy
  • spread liberally over the pie
  • put in 350 for 8 min to brown the meringue
  • Let cool and server
