Egg Plant Parmigiana

Ingredients

  • 1 large eggplant
  • dash salt
  • dash pepper
  • 1 cup bread crumbs
  • 1 lightley beaten egg
  • 1 tsp basil
  • some oil
  • some spaghetti sauce
  • some mozerrella cheese
  • 1/4 cup parmeason cheese

Instructions

  • Wash and cut the eggplant into slices
  • Season with salt and pepper
  • Roll in crumbs then egg then crumbs again
  • Fry in oil until tender and golden on both sides
  • line a greased pan wiht the eggplant slices
  • add a dollup of spaghetti sauce on each eggplant
  • put some mozzarella on each slice of eggplant.
  • bake at 350 for 20 min or until cheese is browned to liking.
