Egg Plant Parmigiana
Ingredients
- 1 large eggplant
- dash salt
- dash pepper
- 1 cup bread crumbs
- 1 lightley beaten egg
- 1 tsp basil
- some oil
- some spaghetti sauce
- some mozerrella cheese
- 1/4 cup parmeason cheese
Instructions
- Wash and cut the eggplant into slices
- Season with salt and pepper
- Roll in crumbs then egg then crumbs again
- Fry in oil until tender and golden on both sides
- line a greased pan wiht the eggplant slices
- add a dollup of spaghetti sauce on each eggplant
- put some mozzarella on each slice of eggplant.
- bake at 350 for 20 min or until cheese is browned to liking.
