Date Bran Muffins (Volcanoes)
Ingredients
- 1 cup chopped date
- 2 cups boiling water
- 4 1/2 tsp baking soda
- 1 cup butter crisco, butter crisco or margarine works also
- 2 cup sugar
- 4 eggs slightly beaten
- 1 tsp salt
- 4 cup All Bran (buds)
- 2 cup 40% Bran Flakes
- 1 quart buttermilk
- 5 cup flour
Instructions
- mix dates, soda and boiling water and let mixture cool.
- Blend togethe butter, eggs, sugar and salt till fluffy
- in a very large bowl combine the cereals, flour and butter milk
- add all the ingredients together mixing well.
- add other ingredients and mix well
Notes
Keeps in the refrigerator up to 6 weeks.
Spoon out as needed.
Can be baked in cup cake pans in the oven for 20 minutes at 375.
or
Put in glass cups and microwave for about 1 min or until tops are dry .
Some of my family put it into cereal bowls and microwaved until tops are dry
