1 st day mix ingredients in a larger bowl cover and set in referegerator over night.
2nd day knead mixture again and let set over night on refrigerator over night again
3rd day kead again and divide into 4.7 oz sections and form into logs
paste with solution of 1 part liquid smoke and 4 parts water
put a little of the solution in bottom of the pan.
bake in oven at 150 for 8 hours. on lower rack
turning and basting every 30 min.
the meat should be at an internal temperature of 150 degrees.
cool on paper towling wrap and freeze of refrigertate
