Ingredients

  • 4 lbs hamburger
  • 1 lbs ground pork
  • 5 tbsp mortons tender quik salt
  • 1 1/2 tsp garlic salt
  • 2 1/2 tsp coarse ground pepper
  • 2 1/2 tsp mustard seed
  • 2 tsp hickory smoked salt

Instructions

  • 1 st day mix ingredients in a larger bowl cover and set in referegerator over night.
  • 2nd day knead mixture again and let set over night on refrigerator over night again
  • 3rd day kead again and divide into 4.7 oz sections and form into logs
  • paste with solution of 1 part liquid smoke and 4 parts water
  • put a little of the solution in bottom of the pan.
  • bake in oven at 150 for 8 hours. on lower rack
  • turning and basting every 30 min.
  • the meat should be at an internal temperature of 150 degrees.
  • cool on paper towling wrap and freeze of refrigertate
