Frog Eye Salad
Ingredients
- 1/2 cup sugar
- 1/4 tsp salt
- 1 tbsp flour
- 1 beaten egg
- 1 1/4 cup pineapple juice
- 1 tbsp lemon juice
- 1 large can pineapple drained Can use Packed in own juice with the pineapple juice
- 1 ;arge cann fruit cocktail
- 1 large sliced banana
- 6 oz Cooked acini de pepi
Instructions
- combine sugar, salt, flour, egg, and pinaple juice in a saucepan
- cook until thick then add lemon juice
- cool to room temperature
- drain and add to pineapple sauceand mix
- chill over night
- combine mixture and pineapple chunks, fruit cocktail , bananna, and cool whip
- chill and serve
Notes
May substitute whipped cream
May also add 1 cup mini marshmallows
Small Batch
3 oz acini de pepi
1/4 cup sugar
1/2 tsp flour
6 tbsp juice
1 egg yolk
1 tsp lemon juice
1/8 tsp salt
whipped cream and 1/2 can of both pineapple and fruit cocktail
follow same directions
