Frog Eye Salad

Ingredients

  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tbsp flour
  • 1 beaten egg
  • 1 1/4 cup pineapple juice
  • 1 tbsp lemon juice
  • 1 large can pineapple drained Can use Packed in own juice with the pineapple juice
  • 1 ;arge cann fruit cocktail
  • 1 large sliced banana
  • 6 oz Cooked acini de pepi

Instructions

  • combine sugar, salt, flour, egg, and pinaple juice in a saucepan
  • cook until thick then add lemon juice
  • cool to room temperature
  • drain and add to pineapple sauceand mix
  • chill over night
  • combine mixture and pineapple chunks, fruit cocktail , bananna, and cool whip
  • chill and serve

Notes

May substitute whipped cream
May also add 1 cup mini marshmallows
Small Batch
3 oz acini de pepi
1/4 cup sugar
1/2 tsp flour
6 tbsp juice
1 egg yolk
1 tsp lemon juice
1/8 tsp salt
whipped cream and 1/2 can of both pineapple and fruit cocktail
follow same directions
