Bean Chowder

Ingredients

  • 4 tbsp butter
  • 1 cup chopped zucchini
  • 1/4 cup diced onions
  • 1/4 cup diced celery
  • 1/4 cup diced carrots
  • 1 tbsp flour
  • 2 cups water
  • 2 cups canned italian tomatoes
  • 6 oz pared and cubed potatoes
  • 1/2 tsp thyme
  • 1/2 tsp oragano
  • 4 oz kidney beans canned
  • 4 oz garbanzo beans canned
  • 4 oz pinto beans canned

Instructions

  • in a 3 quart sausepan melt butter.
  • add onion, zuccini to carrot and saute over med high stirring occasinally until tender
  • sprinkle with flour and stir quickly to combine
  • Cook stirring for 1 min.
  • gradally stir in water, tomatoes, potatoes, and seasonings
  • bring to boil
  • reduce heat to simmering until potatoes are tender
  • stir in beans and cook till warm

Notes

when omitting flour = no optional cal
when omitting potatoes = no bread
