Bean Chowder
Ingredients
- 4 tbsp butter
- 1 cup chopped zucchini
- 1/4 cup diced onions
- 1/4 cup diced celery
- 1/4 cup diced carrots
- 1 tbsp flour
- 2 cups water
- 2 cups canned italian tomatoes
- 6 oz pared and cubed potatoes
- 1/2 tsp thyme
- 1/2 tsp oragano
- 4 oz kidney beans canned
- 4 oz garbanzo beans canned
- 4 oz pinto beans canned
Instructions
- in a 3 quart sausepan melt butter.
- add onion, zuccini to carrot and saute over med high stirring occasinally until tender
- sprinkle with flour and stir quickly to combine
- Cook stirring for 1 min.
- gradally stir in water, tomatoes, potatoes, and seasonings
- bring to boil
- reduce heat to simmering until potatoes are tender
- stir in beans and cook till warm
Notes
when omitting flour = no optional cal
when omitting potatoes = no bread
