Pecan Ice Box Cookies

Ingredients

  • 1 3/4 cup flour
  • 1/4 tsp salt
  • 3/4 cup butter
  • 2/3 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup finely chopped pecans

Instructions

  • sift together flour and salt
  • cream together butter and sugar in bowl until lightly fluffy
  • add egg and vanilla
  • gradually stir in flour and salt
  • stir in 1/4 cup pecan
  • divide in half
  • shape each half into a 6 in roll
  • roll into remaining pecans
  • wrap into waxed paper and chill in refrigerator over night
  • cut each roll into 18 slices
  • place about 2 in apart on greased cookie sheet
  • bake at 350 for 12 min.
  • remove and cool on racks
