Pecan Ice Box Cookies
Ingredients
- 1 3/4 cup flour
- 1/4 tsp salt
- 3/4 cup butter
- 2/3 cup sugar
- 1 egg
- 1 tsp vanilla
- 3/4 cup finely chopped pecans
Instructions
- sift together flour and salt
- cream together butter and sugar in bowl until lightly fluffy
- add egg and vanilla
- gradually stir in flour and salt
- stir in 1/4 cup pecan
- divide in half
- shape each half into a 6 in roll
- roll into remaining pecans
- wrap into waxed paper and chill in refrigerator over night
- cut each roll into 18 slices
- place about 2 in apart on greased cookie sheet
- bake at 350 for 12 min.
- remove and cool on racks
